This Week's Bake: 4 Pastéis De Nata
I’m obsessed with these – I once made my friends walk for miles with a roaring hangover in 30 degree heat to find the best pastéis de nata in Faro (it was worth it!). The best place to buy a pastel de nata is actually in Belém where they originated. The recipe was developed by monks in the late 19th century who had excess egg yolks after using egg whites to starch their clothes (this also led to the invention of Fios de Ovos and other egg-yolk based foods). Ours are made with inverse puff pastry (extra buttery puff pastry), which is rolled up to create even more flakey, buttery layers. They are then filled with a rich egg custard flavoured with cinnamon and lemon zest and baked in a super hot oven until they are crisp and burnished. I’m not sure why I haven’t included these in a weekly bake yet… (maybe because I thought I might eat them all?)… Delivery date: Saturday 24th April between 9am-11am NHS friends - place your order using your NHS email address and you will be refunded 15% of your weekly bake.
