This Weeks Bake: 4 Kouign Amann


“The fattiest pastry in all of Europe” according to a New York Times article from 2011 - I'm not sure that is true but they are delicious.


From the Breton meaning 'butter-cake' Kouign Amann are a pastry from Brittany, developed around 1860 - they are crisp and caramelised on the outside yet soft within. The dough is similar to that of a croissant - made with a preferment which develops a lactic, slightly nutty flavour, before being laminated with layers of rich butter, rolled up with sugar and baked until caramelised and crunchy.
