This Weeks Bake: 4 Mont Blanc tarts with espresso infused cream
You can’t go wrong with a dessert inspired by the highest mountain in Europe…
There are lots of variations of the Mont Blanc, which was invented in the 1800s (the dessert not the mountain, which had been there for some time…) This version consists of a pâte sablée tart base filled with muscovado French meringue, covered in cold infused espresso cream and topped with roast chestnut puree and a toasted hazelnut… phew. I feel like I’ve climbed a mountain already!
