This Weeks Bake: 5 Lemon Meringue Tarts
Ancient Greek Tarts? According to Wikipedia that's where these originated (there is no reference given for this claim). I'm dubious, and fairly sure they actually come from the Southern states of the USA. My grandmother used to make a delicious lemon meringue pie and I still have the original recipe in her handwriting.
These lemon meringue tarts aren't made using my grandmother's recipe, although it did inspire me. I've spent a lot of time working on my own recipe to achieve a clean, sharp lemon filling encased in a thin, crisp pastry contrasting with a soft, lightly charred meringue - tangy, not too sweet, with lots of texture.
So it doesn't really matter where it's from, whether you're Dionysius the Elder or Donald Trump (one and the same in my opinion), we can all enjoy these lemon tarts.
