This Weeks Bake: Galette des Rois
These ‘Cakes of Kings’ are traditionally served on January 6th (the 12th day of Christmas, or the day of Epiphany) but can usually be found throughout January in France. Light, flaky puff pastry is filled with frangipane and usually a tiny fève (bean) that is supposed to bring good luck to whoever finds it – crowning them ‘King for the day’
This weeks bake consists of 4 individual galette so that everyone can be king (or queen) for a day (no beans involved). The puff pastry is hand made with rich British butter and filled with a roast almond frangipane.
